Salted Caramel Gummies
These gummies are one of my kids all time favourites. They remind me of a chewy caramel lolly but without all the nasty ingredients.
Salted Caramel Gummies
Makes 12 large (silicone ice-cube mould size) squares
Gluten free, dairy free, egg free, nut free
Ingredients:
1 cup dried dates
1/2 cup coconut cream
1/2 cup water
1/2 tsp vanilla powder or sub
1 tsp vanilla extract
1/4 tsp salt
2 tablespoons plus 1 teaspoon grass fed gelatin
Instructions:
Blend dates, coconut cream, 1/4 cup of the water, vanilla and salt in a high-speed blender or food processor until smooth and creamy.
Transfer mixture into a medium saucepan.
In a small bowl, mix gelatin with the remaining water until the gelatin has soaked up all the liquid.
Add the gelatin mixture to the saucepan with the date mixture, heat gently and stir until gelatin has dissolved.
Pour into silicone ice-cube moulds or a container lined with baking paper and place in the fridge until set
