Christmas Gummies

I made these Christmas gummies for a bit of fun for the kids and they were super impressed! I love how much they look like lollies but are 100 times better for you.

They are a lot easier to make than they look. The layers are all really simple, the trickiest part is in the timing and waiting for them to set.

There are two ways to make these - either in a large rectangular container lined with baking paper, then cut into squares - or in silicone moulds (for these I used square silicone ice cube moulds). The big container option is easier but you’ll have to wait a little longer in between layers for them to set. 


Christmas Gummies

Makes 20-24 large (silicone ice-cube mould size) squares

Gluten free, dairy free, egg free, nut free

Ingredients:

Green Layer

  • 1 cup of green juice of choice

  • Sweetener to taste (I used 1 tsp of honey)

  • 3 tablespoons of grass fed gelatin

    White Layer

  • 1 cup coconut cream

  • Sweetener to taste (I used 1tsp of honey)

  • 3 tablespoons of grass fed gelatin

    Red Layer

  • 1 cup raspberries (fresh or frozen)

  • Juice of half a lemon

  • 1/2 cup of water or kefir

  • Sweetener to taste (I used 1 tsp of honey)

  • 3 tablespoons of grass fed gelatin

Instructions:

Green Layer

  1. Pour green juice into a saucepan. Sprinkle over gelatin and leave to bloom for a couple of minutes. Heat gently and stir until gelatin is dissolved. Add sweetener to taste. Pour into a lined container or silicone moulds filled a third of the way. Place in the fridge for about 15-20 mins or until just set. You can speed this up by placing it in the freezer.

White Layer

  1. Follow the same instructions as for the green layer. Wait until the green layer is just set - use your finger to test this then pour over the white layer. Place in the fridge for another 15-20 mins or the freezer until just set.

Red Layer

  1. Blend everything except for the gelatin together until smooth.

  2. Pour through a fine sieve to remove the raspberry seeds.

  3. Discard the seeds, then pour the mixture into a saucepan and follow the instructions for the previous layers. Once the white layer is just set pour the red layer on top and place in the fridge until set.

  4. If making these in a big container - cut into squares once set.
