Banana Crème Caramel Gummies

These gummies are a cross between a banana custard and a crème caramel. They are full of good fats, protein and gut loving gelatin, which makes them great for a snack or a bite size dessert.


Banana Créme Caramel Gummies

Makes 20-24 large gummies

Gluten free, dairy free option, nut free

Ingredients:

  • 3 bananas

  • 1 400ml can coconut milk

  • 2 eggs

  • 2 tablespoons coconut oil

    or butter if dairy is tolerated

  • 2 tablespoons coconut sugar

  • 1/2 tsp vanilla powder (optional)

  • 1/4 tsp salt

  • 4 tablespoons grass fed gelatin

Instructions:

  1. Blend the bananas with the coconut milk.

  2. Add to a medium saucepan then sprinkle over the gelatin and leave for a minute until the gelatin has softened.

  3. Add the rest of the ingredients to the saucepan and heat gently on low to medium. Whisk the mixture continuously until it has thickened enough to coat the back of a spoon.

  4. Pour mixture into silicone moulds and place in the fridge until set. These will last up to 4 days in the fridge.

    Notes:

    Thermomix instructions - blend up the bananas with the coconut milk for 20 seconds on speed 7, scrape down the sides then add the rest of the ingredients and cook for 7 minutes, 90 degrees, speed 4.
