Chocolate Custard Gummies

These chocolate custard gummies are full of protein and good fats from the coconut oil, eggs and gelatin to help keep you and your little ones fuller for longer.

They also make for a nice alternative to chocolate for little ones at Easter time. My kids love when I make them in silicone Easter egg moulds.


Chocolate Custard Gummies

Makes 20-24 large gummies

Gluten free, dairy free option, nut free

Ingredients:

  • 2 cups canned coconut milk

  • 2 tablespoons cacao powder

  • 2 tablespoons coconut oil or butter (if dairy is tolerated)

  • 2-3 tablespoons sweetener - use maple syrup, honey or coconut sugar

  • 2 eggs

  • Pinch salt

  • 1/2 tsp vanilla powder or 1tsp vanilla extract

  • 4 tablespoons grass fed gelatin

Instructions:

  1. Add all ingredients to a saucepan and heat gently on low to medium. Whisk constantly until the mixture has thickened like custard.

  2. If you have a Thermomix, add all ingredients to the bowl and cook for 7 minutes, 90 degrees, speed 4.

  3. Pour mixture into silicone moulds and place in the fridge until set.
