Mango Chia Roll Ups
These mango chia roll ups are super easy to make and you don’t need any special equipment. They are different than your traditional roll up made in a dehydrator, they are basically a gummy recipe made flat then rolled up. Credit goes to the girls over at Baby Food Bible for this awesome idea.
Mango Chia Roll Ups
Makes 6-8
Gluten free, dairy free, egg free, nut free
Ingredients:
1 cup mango flesh
1/2 cup water
Juice half a lime
1 tablespoon chia seeds
1-3 tsp honey to taste (optional)
3 tablespoons gelatin
Instructions:
Blend the mango, water, lime juice, chia seeds and honey together until smooth.
Pour the mixture into a small saucepan then sprinkle over the gelatin.
Leave to bloom for a minute then heat gently and stir until gelatin has dissolved.
Pour the mixture onto a baking tray lined with baking paper and spread out evenly with a spatula.
Place in the fridge for a few hours or until set.
Once set, slice the mixture into long even slices and roll up like a roll up. Store in a container in the fridge where they will keep for up to 5 days.
Notes:
These roll ups will melt at warm temperatures so they are best served out of the fridge.
