Smoky Nut Mix
These delicious smoky nuts make a simple edible gift idea and are easily customisable to please all.
Smoky Nut Mix
Makes 1 medium jar
Gluten free, dairy free option, egg free
Ingredients:
2 cups mixed nuts - I used a combination of cashews, macadamias and almonds
2 tablespoons unsalted butter, melted (substitute for a light olive oil if dairy free)
1 tablespoon fresh rosemary, finely chopped
1 teaspoon smoked paprika
1 teaspoon coconut sugar
1/2 teaspoon salt
Instructions:
Preheat your oven to 160°C
In a large bowl, combine the mixed nuts.
Melt the butter in a small saucepan on the stovetop.
In a small bowl, mix together the melted butter, smoked paprika, coconut sugar, and salt.
Pour the seasoning mixture over the mixed nuts and toss them until the nuts are evenly coated.
Sprinkle with chopped rosemary and stir to cover.
Spread the nuts in a single layer on a baking sheet lined with baking paper.
Bake for about 15-20 minutes, stirring once or twice during baking. Keep a close eye on them to prevent burning.
Allow the nuts to cool completely on the baking tray. They will continue to crisp up as they cool.
Once cooled, transfer the nut mix to a glass jar where they will keep fresh in the pantry for a couple of weeks.
