Ginger and Date Blondies

I tweaked my Ginger and Date cookie recipe and came up with these ginger and date blondies as a variation. They are gluten free, dairy free fudgy and delicious.


Ginger and Date Blondies

Makes 10-15 pieces

Gluten free, dairy free

Ingredients:

  • 1 cup almond meal

  • 1/2 cup dried dates

  • 1/3 cup collagen powder

  • 2 tablespoons coconut sugar

  • 1/3 cup chocolate chips or chunks

  • 3 tablespoons coconut oil

  • 2 eggs

  • 2-3 teaspoons of ginger powder (depending on how gingery you like it)

  • 1/2 tsp bicarb

Instructions:

  1. Preheat oven to 180 degrees C.

  2. Place all ingredients except for the chocolate into a food processor or blender and blend until combined.

  3. Stir through half of the chocolate then pour into a lined baking dish (I used a 20cm x 14cm).

  4. Sprinkle with the rest of the chocolate and bake for 15-20 mins or until the top is set and a skewer comes out clean.

  5. These will look quite fluffy when they come out of the oven but will shrink down and get fudgy as they cool.

  6. Wait until they have cooled down completely otherwise they will break apart in the middle.

  7. Store in the fridge where they will get extra fudgy.

Notes:

  • If you cook these for too long they won’t get as fudgy on the inside. The key is to get the timing right and wait until they are cool to cut. It’s better to slightly undercook them than to overcook them.

  • If you don’t have collagen powder you can use extra almond meal.
