Berry ‘Cheesecake’ Ice-creams

The weather is warming up here in QLD and my kids have been requesting ice-creams for an afternoon snack. These berry ones are our current favourites and remind us of a berry cheesecake but without the dairy.


Berry ‘Cheesecake’ Ice-creams

Makes 5 large ice-creams

Gluten free, dairy free, egg free

Ingredients:

  • 1 cup berries fresh or frozen (I used frozen mixed berries)

  • 1 cup coconut yoghurt (or can substitute half coconut yoghurt and half coconut cream)

  • 1/2 cup cashews

  • Juice and zest of half a lemon

  • 1 tablespoon collagen powder (optional)

  • 1-2 tablespoons of honey

Instructions:

  1. Blend all ingredients together on high speed until creamy.

  2. Pour into ice-cream moulds of choice and place in the freezer until set.
