Nut Free Fudgy Brownies
These brownies are oh-so fudgy and delicious. They taste delicious on their own or served with ice-cream as a dessert.
Nut Free Fudgy Brownies
Makes 10-15 pieces
Gluten free, dairy free, nut free
Ingredients:
1 cup sunflower seeds
1/3 cup cacao powder
1/3 cup collagen powder
1/3 cup coconut sugar
1/3 cup chocolate chips or chunks
3 tablespoons coconut oil
2 eggs
1/2 tsp bicarb
1/2 tsp vanilla
pinch salt
Instructions:
Preheat oven to 180 degrees C.
Grind the sunflower seeds in a food processor or blender until fine.
Then add the rest of the ingredients and process on low speed until the mixture comes together (the mixture will be very thick).
Pour into a lined baking dish (mine was 20cm x 14cm) and sprinkle with some extra chocolate chips.
Bake at 180 for 15-20 mins or until the top is just set and a skewer comes out clean
You may be tempted to cut these when warm but wait until they have cooled down completely otherwise they will break apart in the middle
Store in the fridge where they will get extra fudgy.
Notes:
If you cook these for too long they won’t get as fudgy on the inside. The key is to get the timing right and wait until they are cool to cut. It’s better to slightly undercook them than to overcook them.
If you don’t have collagen powder you can use extra sunflower seeds.
