Creamy Mango Gummies

This is another one of my favourite recipes to try this mango season. These creamy mango gummies are sweet and creamy with a slight tang. They are quick to make and come together in one simple layer.


Creamy Mango Gummies

Gluten free, dairy free, nut free, egg free

Ingredients:

  • 1 cup mango flesh (approx 1 whole mango)

  • 1 cup coconut cream

  • Juice of half a lime

  • 2 tablespoons of liquid sweetener of choice

  • 3 tablespoons grass fed gelatin

Instructions:

  • To a blender add mango, coconut cream and lime juice and blend until smooth and creamy.

  • Transfer mixture to a medium saucepan and sprinkle over gelatin.

  • Leave for a minute to ‘bloom’ (gelatin will soak up the liquid).

  • Heat gently and stir until gelatin dissolves. Stir though the sweetener and adjust if needed.

  • Pour into silicone moulds of choice or a large container lined with baking paper.

  • Place in the fridge until set.

Notes:

  • The colour/flavour will vary slightly depending on the type of mango you use.
