Creamy Mango Gummies
This is another one of my favourite recipes to try this mango season. These creamy mango gummies are sweet and creamy with a slight tang. They are quick to make and come together in one simple layer.
Creamy Mango Gummies
Gluten free, dairy free, nut free, egg free
Ingredients:
1 cup mango flesh (approx 1 whole mango)
1 cup coconut cream
Juice of half a lime
2 tablespoons of liquid sweetener of choice
3 tablespoons grass fed gelatin
Instructions:
To a blender add mango, coconut cream and lime juice and blend until smooth and creamy.
Transfer mixture to a medium saucepan and sprinkle over gelatin.
Leave for a minute to ‘bloom’ (gelatin will soak up the liquid).
Heat gently and stir until gelatin dissolves. Stir though the sweetener and adjust if needed.
Pour into silicone moulds of choice or a large container lined with baking paper.
Place in the fridge until set.
Notes:
The colour/flavour will vary slightly depending on the type of mango you use.
