Mango Cream Two-Layer Gummies
Mango season is here, and I couldn’t be more excited! This is one of my favourite mango recipes to make this time of year. These two-layer mango cream gummies are the perfect balance of fruity and creamy, and they’re always a hit with the kids. Plus, they’re way easier to make than they look!
Mango Cream Two-Layer Gummies
Gluten free, dairy free, nut free, egg free
Ingredients:
Mango Layer
1 cup mango flesh (roughly 2 large mango cheeks)
1/2 cup water
juice of half a lime
1 tablespoon honey
3 tablespoons gelatin
Cream layer
1 cup coconut cream
1 tablespoon honey
2 tablespoons gelatin
Instructions:
Mango layer
To a blender add the mango, water, lime juice and honey and blend until smooth.
Pour the mixture into a small saucepan then sprinkle over the gelatin.
Leave to bloom for a minute then heat gently and stir until gelatin has dissolved.
Pour into moulds and only fill halfway then place in the fridge until just set.
Cream layer
Pour the coconut cream into a saucepan and sprinkle over the gelatin.
Leave to bloom, then add the honey and heat gently until gelatin has dissolved.
Pour mixture over the mango layer and place in the fridge for a few hours or until set.
Pop out of the moulds and enjoy!
