Chickpea Blondies

Are you looking for a delicious, gluten-free, dairy-free and nut-free snack that’s also packed with protein? These chickpea blondies are soft, fudgy, and perfect for lunchboxes and afternoon treats. My kids have been loving them.

They’re made with wholesome ingredients like chickpeas, tahini, and collagen powder, naturally sweetened with honey and loaded with dairy-free chocolate chips.

This recipe is easy to make - all you need is a food processor. If you're looking to boost the protein even more, I’ve got some simple add-ins to take them to the next level.


Chickpea Blondies

Gluten free, dairy free, nut free, egg free

Makes approximately 16 pieces

Ingredients:

  • 1 can (400g) chickpeas, rinsed and drained

  • 1/2 cup hulled tahini

  • 3 tablespoons honey

  • 2 tablespoons collagen powder

  • 2 teaspoons vanilla extract

  • 1/4 tsp salt

  • 1 tsp baking powder

  • 1/3 cup dairy free chocolate chips

Instructions:

  • Preheat your oven to 180°C (350°F) and line a 20x20cm (or similar) baking tray with baking paper.

  • In a food processor, blend the chickpeas, tahini, honey, vanilla, salt, and baking powder until smooth and creamy, scraping down the sides as needed.

  • Stir in the chocolate chips, saving a few to sprinkle on top.

  • Spread the mixture evenly into the prepared baking tray and sprinkle the extra chocolate chips on top.

  • Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out mostly clean.

  • Allow the blondies to cool completely in the pan before slicing. This helps them firm up for easier cutting.

  • Store in the fridge for an extra fudgy texture.

Want to boost the protein even more? Try these:

  • Hemp Seeds: Sprinkle 2 tablespoons on top before baking for an extra 6g of protein.

  • Extra Collagen Powder: Add one more scoop to the batter for an added boost.
