Mango Passionfruit Gummies
Gummies are one of my favourite things to make for my kids. These mango passionfruit ones are a favourite to make in summer when mangoes are in season.
Mango Passionfruit Gummies
Makes 20-24 gummies
Gluten free, dairy free, egg free, nut free
Ingredients:
The flesh from 1 mango cheek and one seed
1/2 cup of water
2 passionfruits
3 tablespoons of gelatin
1-2 tablespoons of honey or preferred liquid sweetener
Instructions:
Blend the mango and water until smooth.
Pour the mixture into a saucepan and sprinkle the gelatin evenly over the surface.
Leave for a minute or 2 until the gelatin has started to soak up the liquid.
Turn on the heat and add the passionfruit pulp and honey.
Stir gently until the gelatin has dissolved.
Pour the mixture through a strainer to catch the passionfruit seeds. Discard the seeds then pour into silicone moulds of choice.
Place in the fridge for a few hours or until set.
Notes:
Gummies can melt at high temperatures so if you’re packing them in kids lunchboxes make sure you pack an ice-brick to keep them cool.
These gummies last about a week in the fridge or you can freeze them for up to 3 months.
