Five Ingredient Wraps

These wraps are one of my most popular recipes. They are a cross between a wrap bread and a crepe, they are stretchy and rollable and make for the best burrito or lunchbox wrap. And best of all they are gluten, dairy and grain free.


Five Ingredient Wraps

Makes 6-8 wraps

Gluten free, dairy free, nut free

Ingredients:

  • 3 eggs

  • 1 cup tapioca starch/flour

  • 1 cup any milk

  • 1/2 - 1 cup spinach leaves (depending on how green you like them)

  • 2 tablespoons coconut flour

Instructions:

  1. Place all ingredients into a blender and blend on high speed until smooth.

  2. Heat a frypan on medium heat and add a drizzle of olive oil (you can use coconut oil or butter but it makes the wraps stick together in the fridge).

  3. Pour out mixture into desired wrap size. Cook until bubbles have formed then flip over and cook on the other side.

  4. Serve with fillings of choice.

    Notes:

    You can omit the spinach if you don’t want them green.

    These will store covered in the fridge for up to 3 days or you can freeze them with a layer of baking paper to separate for up to 3 months.
