Choc Vanilla Ice-Creams
It’s super easy to make your own dairy free, creamy, choc-vanilla magnum style ice-creams at home that don’t contain any gums or thickeners like your store bought options.
Choc Vanilla Ice-Creams
Makes 7 large ice-creams
Gluten free, dairy free, nut free
Ingredients:
1 x 400ml can coconut cream
2 egg yolks
3 tablespoons honey or more to taste
1 tsp vanilla extract or 1/2 tsp vanilla powder
1 tsp gelatin
Chocolate coating
150g dark chocolate
2 tablespoons coconut oil
Instructions:
Whisk all the ice-cream ingredients together in a medium saucepan except for the gelatin. Sprinkle your gelatin over the surface leaving for a minute for it to soak up the liquid.
Heat gently and whisk the mixture together until the gelatin has dissolved - this will only take a few minutes.
Pour into ice-cream moulds of choice (this mixture will make 7 large ice-creams) and place in the freezer until set.
Once the ice-creams are set you can eat as is or coat them with chocolate.
To make your chocolate coating - melt the chocolate in a heatproof bowl over a pan of simmering water. Once melted whisk through the coconut oil.
Pour the chocolate mixture into a tall glass (wide enough to fit your ice-creams in) and dip the frozen ice-creams into the chocolate mixture to coat. Sprinkle over some chopped nuts and drizzle over the remaining chocolate to make these extra fancy.
Transfer ice-creams onto a tray lined with baking paper and place bake in the freezer to set (this will only take a minute).
