Blueberry Coconut Yoghurt Gummies

These gummies are super simple to make and make the perfect snack for little ones. You can swap the blueberries for strawberries, raspberries or a combination of them all. 


Blueberry Coconut Yoghurt Gummies

Makes 20-24 (depending on the size of your moulds)

Gluten free, dairy free, egg free, nut free

Ingredients:

  • 1 cup coconut cream

  • 1/2 cup coconut yoghurt

  • 1 cup blueberries (fresh or frozen)

  • 3 tablespoons grass-fed gelatin powder

  • 2 tablespoons honey

  • Zest and juice of half a lemon

  • 1/2 tsp vanilla powder or sub 1 tsp vanilla extract

Instructions:

  1. Place blueberries, coconut cream, lemon juice and zest, vanilla and honey into a blender and blend until smooth.

  2. Pour mixture into a medium saucepan, sprinkle over gelatin and leave to bloom (this should only take a minute or two).

  3. Stir over a low to medium heat to gently dissolve the gelatin.

  4. Once gelatin is dissolved take off heat and whisk through yoghurt.

  5. Pour into silicone moulds and place in fridge for a couple of hours or until set.

Notes:

Swap blueberries for strawberries, raspberries or a combination of them all.
