Three Ingredient Fermented Onions

These onions are one of the simplest ferments you can make, perfect for those new to fermenting. All you need is onions, garlic, salt, a wide mouth jar and something to weigh your ingredients down.

Three Ingredient Fermented Onions

Makes 1L Jar

Gluten free, dairy free, egg free, nut free

Ingredients:

  • 3 onions, thinly sliced (you can use brown or red)

  • 4-5 cloves of garlic, peeled (you can use more if you wish)

  • 1 tablespoon of salt

  • 1 cup of water

Instructions:

  1. Mix salt and water together to make the brine.

  2. Add the whole garlic and sliced onions to a 1L wide mouth mason jar.

  3. Pack them in tightly then pour the brine on top to cover.

  4. Top up with any extra water to cover.

  5. Weigh down with a fermentation weight or something that will fit inside your jar.

  6. Place the lid on and leave on the bench out of direct sunlight to ferment.

  7. Leave for 5-10 days or until the taste is to your liking. The brine will get a little cloudy which is normal.

  8. Serve as you wish - they are great in salads or chopped up in avo dip and the brine makes the most delicious starter for my cultured cashew cheese recipe.
