Mango Coconut Ice-Creams

When mangoes are in season these are my favourite things to make for the kids.


Mango Coconut Ice-Creams

Makes 6-8 (depending on the size of your moulds)

Gluten free, dairy free, nut free, egg free

Ingredients:

Mango layer

  • 1 mango

  • 1/4 cup water

  • juice of half a lime

  • 1 tablespoon honey

  • 1 tablespoon collagen powder (optional)

Coconut layer

  • 1 cup coconut cream

  • 1 tablespoon honey

  • 1 tablespoon collagen

    powder (optional)

Instructions:

  1. First make the mango layer. Place all the mango layer ingredients into a blender and blend on high speed until smooth.

  2. Pour into ice block moulds, only filling halfway and place in the freezer for around 30 minutes or until just set.

  3. Then make the white layer. Blend all the white layer ingredients together until smooth then pour on top of the mango layer.

  4. Place back in the freezer for a couple of hours or until frozen.

Notes:

To get some probiotics in these, swap the water for kefir and swap some of the coconut cream for coconut yoghurt.
