Ginger Bug

Ginger bug is a perfect drink to make for those new to fermenting. It’s super simple, punchy in flavour and only uses three ingredients – ginger, sugar and water. It’s a fun and easily manageable ferment for kids to make and watch how their ‘bug’ transforms over the week.


Ginger Bug

Makes 1L

Gluten free, dairy free, egg free, nut free

Ingredients:

  • 3 cups of filtered water

  • 3 teaspoons of raw sugar

  • 3 teaspoons of grated ginger

Instructions:

  1. Combine all ingredients in a mason jar.

  2. Give everything a good stir, cover with a muslin cloth and secure with some string.

  3. Allow to sit in a warm spot out of direct sunlight.

  4. Everyday for the next week add 2 more teaspoons of sugar and grated ginger.

  5. The liquid will begin to get bubbly towards the end of the week.

  6. Once it's bubbly give it a taste. If it's too sweet leave it to ferment for a day or two.

  7. When the taste is to your liking strain out the ginger and drink it as is or dilute with soda water.

Notes:

You can use this ginger bug for a second ferment flavour for kombucha or water kefir. Add about 1/2 cup of the ginger bug and leave to ferment for around 24 hours.
